This year, the holiday observance begins the evening of Sunday, December 14, through the evening of Monday, December 22, 2025. The holiday celebrates the miracle of the oil that lasted eight days in the Temple menorah, symbolizing faith, resilience, and hope. Traditions include lighting the menorah each evening, playing the dreidel, giving gifts, and enjoying foods fried in oil such as latkes (potato pancakes) and sufganiyot (jelly-filled doughnuts). Ingredients:
4 medium potatoes, grated and drained

½ tsp ground ginger
2 tbsp olive oil
Instructions:
Combine potatoes, onion, egg, flour, salt, pepper, rosemary, and ginger.
Heat oil in a skillet over medium heat.
Form small patties and fry until golden brown on both sides.
Serve with applesauce or a yogurt-based dip, optionally sprinkled with fresh herbs.
